Fast Fresh Family Cooking: Zoodles with Sausage Meatballs Recipe

Getting another serve of vegetables into your family’s diet has never been easier with our tasty Zoodles with Sausage Meatballs recipe.

This recipe uses zucchini as the noodles providing a nutrient packed, wheat free, alternative to pasta. You can peel the green off for the perfect disguise, or leave it on for more fibre.
 
The trick to the super tasty sauce is to your top quality sausages.  We have used an Italian sausage because we love how the flavours matches perfectly with the tomato sauce.




Zoodles with Sausage Meatballs Recipe
Serves 4 – 6
Ingredients and shopping list
2 zucchini, trimmed
2 tbsp extra virgin olive oil
1 red onion, finely chopped
8 thick beef sausages
540g jar tomato based pasta sauce
1/2 cup water
Shaved Parmesan, to serve
Basil leaves, to serve

Method

 1. To make zoodles, use a spiralizer to create zucchini noodles. Alternatively, use a mandolin or vegetable peeler to cut zucchini into long thin ribbons. Stack ribbons ontop of each other about 5 ribbons high, and use a large sharp knife to cut into thin spaghetti like strips. Repeat with remaining zucchini. Transfer to a bowl and
set aside.
2. Heat a large non-stick frying pan over medium heat and add oil and onion. To make the sausage meatballs, squeeze the fillings from the sausage casings into bite size pieces into the pan. Cook stirring occasionally for about 10 minutes until browned and almost cooked through.
3. Stir in sauce. Add water to the empty sauce jar. Top with lid and shake, then add to pan. Bring to a simmer. Cook, stirring occasionally for 2-3 minutes or until meatballs are cooked through and sauce is hot.
4. Remove from heat, then stir in zoodles, gently tossing to combine. Serve immediately topped with Parmesan and basil.
