Fast Fresh Family Cooking: Mexican Fish Tortillas Recipe

Fish is a great source of healthy Omega 3 fatty acids, making it a really nutritious source of protein for the family. These tortillas are a great way to include this nutritious protein into the diets of even the fussiest of eaters. The trick is picking the right kind of fish. Ling is a great choice; it’s sweet and mild and is so easy to cook.
 
Fresh herbs are also nutritious. Filled with antioxidants and vitamin C, this herb salsa transforms them into a delicious immune booster.
 
Don’t let the ingredients list fool you; this recipe is still super simple and quick to make.

 
Mexican Fish Tortillas
Serves 4

Ingredients and shopping list                                   
 
1/2 cup coriander leaves
1/2 cup parsley leaves
1/2 clove garlic
2 green shallots, chopped
1 lime juice and finely grated zest
1/3 cup extra virgin olive oil
500g boneless skinless white fish fillets
3 tsp taco seasoning
1 tbsp olive oil
1 tomato, diced
1/2 cup corn kernels
1 avocado, diced
2 cups shredded iceberg lettuce leaves
4 rounds wholemeal Lebanese bread
Pinch caster sugar
Salt and pepper, to season
Tomato salsa, to serve
Sour cream, to serve
 
Method

1 To make herb salsa, put coriander, parsley, garlic, shallots, lime juice and zest, olive oil and sugar into a small food processor. Pulse for 30 seconds or until a chunky sauce forms. Season with salt and pepper. If you would like a thinner sauce, simply add 1 tsp of cold water at a time until desired consistency is reached. Set aside in the fridge.
2. Put fish fillets on a plate and sprinkle top of fillets with taco seasoning. Put extra oil in a large frying pan and heat over high heat. Add fish and cook for 2-3 minutes each side or until cooked through. Transfer to a plate and cut into thick strips.
4. Meanwhile, combine tomato, corn and avocado in a medium bowl.
5. Scatter lettuce down the centre of each round of bread, top with fish, avocado mixture, a drizzle of tomato salsa, dollop of sour cream and drizzle of herb salsa.
