Fast, Fresh Family Cooking: Sticky Honey Soy BBQ Chicken Recipe

The BBQ chook is a family favourite in most households, and why wouldn’t it be? Not only does it make for a quick and easy mid-week meal, but it is also super affordable. 

This recipe uses the good old BBQ chook as a base and features a delicious sticky sauce the kids will love. Don’t worry though, this recipe is simple and will take no time at all!




Serves 4
Ingredients and shopping list                                   
 
1/4 cup sweet soy sauce (Kecap Manis)
1 cm piece ginger, peeled, sliced into matchsticks
1 clove garlic, finely grated
1 Tbsp honey
2 Tbsp white vinegar
3 star anise
450g microwave 90 second Basmati rice
4 green shallots, thinly sliced
2 cups bean shoots
1 whole hot BBQ chicken
Sesame seeds, toasted, to serve

Method

1. To make the sauce, put sweet soy, ginger, garlic, honey, vinegar and star anise into a small saucepan over medium heat. Bring to the boil, stirring occasionally. Set aside keeping warm.
2. Heat rice in the microwave following the packet directions. Transfer to a large bowl and add shallots and bean shoots.
3. Cut chicken into 8 pieces using a pair of scissors or poultry shears, discarding the carcass. Arrange rice and chicken on a serving platter and spoon over sauce. Sprinkle with sesame seeds and serve immediately.
