These Oaty Pikelets are a fast, fresh alternative to the ANZAC Bikkies we all love at this time of year. They feature many of the same ingredients, but are fluffy and light, perfect for a family weekend breaky.
Most of the ingredients will keep well in the cupboard, so keep them on hand for whenever your family deserve a yummy treat.
These pikelets are delicious served with yoghurt, golden syrup and a scattering of Macadamia nuts for some more Aussie deliciousness!
Oaty Pikelets Recipe
Serves 4 – 6
Ingredients and shopping list
1 cup self raising flour
2 tbsp caster sugar
1/4 cup rolled oats
1 1/4 cups buttermilk
1 tbsp golden syrup
1 egg, beaten
1 tbsp butter, melted
2 tbsp butter, chopped
Yoghurt, to serve
Roasted macadamia nuts, chopped, to serve
Extra golden syrup, to serve
Method
1. Sift flour into a large bowl and stir in sugar and oats. Make a well in the centre and add buttermilk, syrup, egg and butter. Gently stir until combined. Set batter aside for 5 minutes.
2. Set a large non-stick frying pan over a medium heat and add a little of the extra butter. Once melted, spoon ¼ cupfuls of batter into pan to make two pikelets at a time. Cook for about 1 minute, or until lightly brown on the bottom and small bubbles have formed on top. Flip and cook for a further 1 minute or until lightly browned and cooked through. Repeat with remaining batter. Set aside keeping warm covered loosely with foil.
3. Serve pikelets warm with yogurt, macadamia nuts and a drizzle of extra golden syrup.
