Fast, Fresh Family Food: Flourless Almond, Coconut & Lime Cakes

Gluten free shouldn’t mean taste free. These Flourless Almond, Coconut & Lime cakes are Gluten free but still really delicious, in fact they are so good, you wouldn’t even know they are.
 
These cakes not only make for a great treat for kids but can even be jazzed up to create an impressive desert. Simply bake these cakes in a greased muffin tin and serve with a scoop of good quality vanilla bean ice-cream on top of each and then scatter over toasted coconut flakes. We guarantee your family and friends will be impressed!
 
While we love the zingy lime flavour in these, if you don’t have any limes on hand you can swap it for orange and lemon.
 
Ingredients & Shopping List 
Serves 12
150g packet almond meal
1/2 tsp gluten free
Baking powder
1 cup caster sugar
150g butter, melted
3/4 cup desiccated coconut
3 eggs
Zest 1 lime
1 tbsp fresh lime juice
Extra desiccated coconut, to decorate

Icing
1/3 cup gluten free soft icing
Sugar mixture
1 tbsp fresh lime juice
 
 
Method
1. Preheat oven to 180˚C. Line the 12 holes of muffin tray with paper cases.
2. Put almond meal, baking powder, sugar, butter, coconut and eggs into a large bowl and stir with a whisk until well combined and smooth. Stir in zest and juice. Spoon mixture evenly into the paper cases.
3. Bake for 20-25 minutes or until cooked when tested with a skewer. Set aside to cool completely in tin.
4. To make icing, sift icing sugar into a large bowl and stir in juice to form a smooth icing. Spoon icing into a zip-lock bag and snip the tip of one of the corners. Pipe rings of icing on top of each cake and sprinkle with extra coconut. Set aside for 30 minutes to allow icing to set.
