Cold Salmon Sushi Bowl

Ingredients: 

  • 450g skinless, boneless salmon 
  • 2 tbsp teriyaki sauce  
  • 1.5 cups cooked brown rice (or 3 pots)  
  • 1 lebanese cucumber  
  • 1 avocado  
  • 1 carrot  
  • 3 lime wedges  
  • Sriracha mayo  
  • Sesame seeds  

Method: 

  1. If using an oven to cook the salmon, preheat oven to 200 degrees celsius  
  2. Cut the salmon into 1-2cm cubes and marinate with the teriyaki sauce  
  3. Cook salmon in an air fryer for 15 minutes on 180 degrees or 15 minutes in an oven on 200 degrees  
  4. Slice the cucumber and avocado and grate the carrot 
  5. Assemble the bowls with brown rice, marinated salmon, grated carrot, cucumber, avocado and lime.  
  6. Top the salmon with sesame seeds and sriracha mayo 
Keep in the fridge for up to 3 days
